Tomato Ketchup

Seriously Good Homemade Ketchup Recipe

Ingredients

  • 1 tablespoon olive oil

  • 1 medium onion, sliced

  • 2 garlic cloves, chopped

  • 3cm piece of ginger, peeled and chopped

  • 1 red chilli

  • ¼ teaspoon ground allspice

  • 2 tablespoons tomato paste

  • 3 cups fresh tomatoes, chopped

  • ¼ cup packed brown sugar

  • ¼ cup apple cider vinegar

  • Salt and fresh ground black pepper

Method

  1. Fry onions in oil over medium heat until they are softened and lightly browned, about 8 minutes.

  2. Add the garlic, ginger, chilli and allspice then cook, stirring often, for 2 minutes.

  3. Add the tomato paste and cook, stirring often, until it turns from red to a burnt orange color, about 2 minutes.

  4. Add fresh tomatoes, sugar, cider vinegar, a generous pinch of salt and black pepper to taste.

  5. Stir then bring to a simmer, reduce the heat slightly and cook at a low simmer, stirring occasionally, until thickened and shiny, about 20 minutes.

  6. Taste then adjust with more salt or pepper.

  7. Blend until smooth.

  8. Can be refrigerated up to one month.
